My sweetheart is the BEST! Her gentle, sweet, loving spirit touches all she comes in contact with. She has carefully prepared for a life of service in missions and her winsome ways attest to this. Her intelligence, thoughtfulness, diligence, and perseverance will take her far in life. Her kindness, joyfulness, and cheerfulness brightens her workplace and puts a big smile on my face. I can safely trust my beloved and although many daughters have done virtuously, she excels them all. She is far above and beyond my wildest dreams and I cannot wait to be called her husband!

There are multiple hotels around the Auburn area. I would advise looking at the different options on trip advisor at either Auburn, Colfax, Grass Valley, or Nevada City. All of these towns will either be close to Weimar, or to the wedding venue. Feel free to contact us if you have any questions.
Weimar College Dorm
This is a dorm that is currently not being used by the college and they are willing to have female wedding guests stay there for $20/night. You would have to bring your own bedding. Each room has a twin bed and a shared bathroom. If this is a good option for you email me at [email protected]
Weimar Inn
$55 /night. This is set in the beautiful campus of Weimar. They have given a special discount for the wedding guests but this discount is only available until 2 weeks before the wedding. Chick-It Seasoning
- 1 ½ c. nutritional yeast flakes
- ½ c. salt
- 1 ½ t. tumeric
- 1 T. garlic
- 3 T. onion powder
- 1 ½ tsp. marjoram
- 1 ½ tsp. sage
- 3 T. parsley
- Place ingredients, in order listed, into a blender.
- Blend on medium thoroughly to a powder-like consistency.
- Store in a sealed container in the refrigerator. Makes 2 cups.
- For a super-flavorful version, use herbs (especially turmeric, marjoram, and sage) from Penzeys.com. This is the "secret" ingredient 😀
Creamy Corn Chowder
- 1 onion, chopped
- 6 c. potatoes, peeled and cubed
- 1 c. raw, washed cashews
- 4 c. corn (frozen or cut off the cob)
- ¼ c. Chick-it Seasoning (see recipe following)
- ¼ c. nutritional yeast flakes
- 1 tsp. basil
- ½ tsp. sage
- 1 bay leaf
- 1 tsp. onion powder
- Salt to taste
- Cook potatoes and onion together in a little water until potatoes are done.
- Blend 2 cups of the potato/onion mixture with the cashews and 1/2 c. of the corn, adding enough water to blend smoothly to a thick, creamy chowder. Leave the rest of the corn and potatoes chunky.
- Mix blender mixture back into rest of potatoes and add more water to entire mixture to achieve desired consistency.
- Add the rest of the corn and all the other seasonings.
- Simmer gently, stirring often, for 10-15 minutes – DO NOT BOIL!
Ruby Borscht
- 1 onion (or 3 TBS dried chopped onion + 1/3 cup water)
- 2 TBS olive oil
- 3/4 cup dry brown lentils (thoroughly sorted and rinsed)
- 2 cups canned tomatoes
- 3 med. carrots, peeled and diced
- 3 med beets, raw,peeled, and diced into chunks OR 2 14-oz cans of canned beets (add pre-cooked or canned beets to stew at end with cabbage)
- 2-4 cups of water (finished consistency is a fairly thick stew)
- 1/2 med. head of cabbage, shredded
- 2 TBS beefstyle vegetarian seasoning or Braggs Liquid Aminos
- Salt to taste
- Soy Mayonnaise or Tofutti Better than Sour Cream
- Dried dill weed or finely chopped fresh dill greens
- Sauté onions in oil in the bottom of a Dutch Oven or soup pot.
- As soon as they are softened, add tomatoes and half of the water.
- Add lentils and return to a rolling boil.
- Add carrots and beets (if using raw beets) and reduce heat to a steady simmer.
- After 45 minutes add the cabbage, canned beets (if using them), and all other seasonings.
- Add water to give desired consistency.
- Simmer for about 15 more minutes and taste for seasoning balance. Add more salt or Braggs Liquid Aminos if desired.
- Serve with a dollop of non-dairy mayonnaise or sour cream and a sprinkle of dill on each bowl of soup.
